Both Baby Back and St. Louis Ribs are Pork ribs and have been smoked the same amount of time. St. Louis ribs are bigger bones and have more meat to them, but also a little more cartilage too. The Baby Backs have less meat but are more tender compared to the St. Louis ribs and are all meat and bone. Both are very popular and are delicious!! Enjoy!
